NEBRASKA FOOD HANDLER REQUIREMENTS
State Regulations The state requires that, during all hours of operation, a person in charge (PIC) is present who can demonstrate knowledge of foodborne disease prevention, HACCP principles, and Nebraska Food Code requirements. One way to satisfy this portion of an inspection is for the PIC to be a Certified Food Protection Manager (CFPM) who has passed an exam with an ANSI-accredited training program. The Lincoln-Lancaster County Health Department (LLCHD), on the other hand, requires at least one PIC with a county-issued Food Protection Manager permit for each establishment. Once you receive certification from an LLCHD-approved and ANSI-accredited program, you have to apply for a permit with LLCHD along with a fee. Lincoln-Lancaster County requires renewal every three years. |

FAQs
When four or more employees are operating in a licensed food facility, a minimum of one certified food protection manager must be there. If there are three or fewer employees, the certified food manager does not need to be present during that time of operation.
The law states that you have 30 days to make sure a food establishment has a certified food protection manager employed when a business is just started, there is a change in ownership, or the previous certified food protection manager quits.
