COLORADO FOOD MANAGER REQUIREMENTS
State Regulations As of March 1, 2025, Colorado requires that most food establishments have at least one Certified Food Protection Manager (CFPM) on staff. This requirement follows the adoption of the FDA 2022 Food Code by the Colorado Department of Public Health & Environment (CDPHE). |
Who Needs a CFPM? Any food establishment where food is actively prepared or served must have a Person in Charge (PIC) who is a Certified Food Protection Manager. This includes: • Restaurants and cafeterias • Food trucks • Grocery stores with food service • Institutional kitchens Some low-risk operations may be exempt, such as: • Bakeries during pre-opening preparation • Locations serving only drinks or prepackaged items • Grocery stores without active food service |

FAQs
When four or more employees are operating in a licensed food facility, a minimum of one certified food protection manager must be there. If there are three or fewer employees, the certified food manager does not need to be present during that time of operation.
The law states that you have 30 days to make sure a food establishment has a certified food protection manager employed when a business is just started, there is a change in ownership, or the previous certified food protection manager quits.
